Rainbow Swiss Chard Easy, Delicious, Healthy Recipe

Rainbow swiss chard offers a gorgeous looking meal and is good for you, too.

When it comes to summer garden vegetables, if you are like me, you have a plethora of choices of what to cook!

Fresh chard is available early in the season and continues to flourish for many months. I will be publishing a book soon with a variety of ways to fix chard. It’s versatile and really good for you!

Here is a good, easy, healthy recipe for your chard

This recipe could easily work for breakfast or dinner. I like to make a big batch and use it for a few meals. It’s also great cold as a quick lunch or snack.

Chard Frittata
2 eggs
1 TBSP olive oil
1/4 onion sliced from top to bottom (for looks)
1 tsp garlic (optional)
1 tomato, chopped into small pieces
From the garden:
8 – 12 swiss chard leaves
a bit of fresh rosemary (optional)

Add oil to frying pan and fry onions and garlic until soft over medium heat. Chop stems of chard into small pieces and place in frying pan. Stir fry for a minute or two. Add chopped chard leaves and tomato. Fry another 2 minutes or so on medium heat. The color of the chard should still be green and the tomatoes still bright and red.

Beat eggs to mix*. Pour beaten eggs over the vegetable mix and let it cook for about 2 minutes at medium heat. Add salt, rosemary, other herbs, pepper, and hot sauce as desired while the mix cooks. Do not stir!

After it starts to set, turn off the heat, place a lid over the mix and let it set for about 5 minutes. This will set the eggs and cook the vegetables a bit more. It will also set the combination of flavors.

*Note: I like to add a few dashes of hot sauce to my eggs for a bit of zing. Totally optional…
