Dandelion Greens are Dandy Indeed

I was blessed to spend several months in Greece in my early 20’s. My Greek boyfriend introduced me to dandelion greens and the whole concept of eating weeds. The greek word sounds better and is pronounced “horta” (like horticulture). I also don’t think it translates to the word weed but more like “greens”. The fact that we harvested our horta from an abandoned field was the reason that this girl thought we were eating weeds.

The disconnect between what I was eating and where it came from was fairly vast at that point in my life


The weeds were incredibly delicious when sautéed in olive oil and served with fresh lemon juice and salt!

Here is a good recipe for using dandelion greens – even those weeds in your garden (unless you use pesticides).

And the cost can’t be beat! Truly, start tending your “greens”. Keep them unsprayed with pesticides and let a few of those wispy flowers spread around the yard. You’ll have the benefits of fresh, tasty greens, even in an urban setting.
